Dinner

I made my salmon, mashed potato, and broccoli dinner tonight and it was delicious! Lots of butter on the broccoli, lots of lemon on the salmon, and well, butter again in the mashed potatoes. :) I have now officially cooked my first piece of fish for myself, and I even have enough for leftovers!

Congrats from me, too! You did GOOD! A yummy meal, and one of my staples (and favorites!...and I just tried fork mashing the other night and found that I liked it better than using a regular potato masher). I always have extra salmon for leftovers and the next night have either warmed salmon on pasta mixed with veggies (spinach? zuccini? broccoli?)all tossed with a garlic olive oil), or a green salad (often, spinach) tossed with the leftover salmon and some feta cheese. (I'm getting hungry -- time to buy some more salmon!)
